Tuna & Tomato with Herbs

Looking for a tasty summer meal idea to keep you nourished and energized? Try a simple recipe using canned tuna, tomatoes and some herbs. You can make it in minutes—no cooking needed! Let me know if you try it.
Makes 2 -3 servings
Ingredients:
* 1 cup tomatoes chopped
* 1 stalk celery, thinly sliced
* 1 can (120 g drained) light flaked tuna in water, drained
* 1/2 cup chopped cucumber
Salad dressing:
* 2 TB wine vinegar
* 1TB olive oil
* 1 clove garlic, minced
* Pinch hot pepper flakes
* 1 TB chopped fresh basil
* 1 TB chopped fresh oregano
Directions:
- Combine ingredients in a large bowl and mix well.
- Prepare salad dressing in a small bowl, and whisk together vinegar, oil, garlic and pepper flakes. Pour over tomato mixture and top with basil and oregano. Toss well.
Serve with a slice of whole grain bread for a balanced meal.
For vegetarian / vegan option, instead of tuna use a can of drained cannellini (white kidney) beans.
